We arrive on time to her venue ‘Obrador de Isabel Maestre’ and we sit down at the same table as the chef after which the restaurant is named, waiting for some of the most representative dishes of her professional career. We are there to celebrate with her the 35th Anniversary of ‘Isabel Maestre Catering’ and in a distended conversation we go over some of the finest moments of her company founded in 1980.
Isabel Maestre knows what the favourite dishes of writer Camilo José Cela where, or what Catherine Deneuve and Caroline of Monaco prefer to eat. The chef has served the tables of some celebrated figures over the course of her career, though she always likes to keep her discretion in these matters.
The nouvelle cuisine has always influenced the culinary choices of Isabel Maestre. The reason might be her education at the Luis Irizar Cooking School in San Sebastian (Spain) and her work in France with figures such as Gaston Lenôtre or Frédy Girardet.
When talking about Isabel, we can’t forget about her daughter Marta, who was also there during our meeting. Marta has already become – like her mother – a big name in the culinary world. With her help, the restaurant they run continues to innovate and position itself as a leading culinary centre, without the risk of their most memorable dishes being forgotten.
After a long conversation, we ask Isabel which are the 10 most representative dishes of the 35 years she has been running her catering business. Although she has to think about it – she has invented so many recipes that coming up with them off the top of her head seams complicated – we now present them to you exclusively.
Down below you will be able to see the distinguished dishes that Isabel Maestre has chosen. Here you will find entrées, main courses and desserts to make up a meal selected by a referent of the culinary world.
