This is the world’s longest-aged Parmigiano Reggiano, matured for 23 years

Vila Viniteca and Ardai presented this unusual wheel of Parmigiano Reggiano during a tasting at the Majestic Hotel in Barcelona.

The event, which brought together a constellation of chefs, sommeliers and specialists in the same majestic space, featured one of the oldest pieces of Parmigiano Reggiano cheese in the world made at the Latteria di Tabiano dairy in the province of Parma.

What does this 23-year-old Parmigiano Reggiano cheese taste like? The magic between the maturing process and the combination of three natural ingredients, natural milk from the Apennine mountains, rennet and salt, results in this historical, salty and somewhat spicy cheese with hints of nuts, undergrowth and truffle.

The Parmigiano Regigiano which was awarded the ‘Mountain Quality’ category by the Conva Consortium, was purchased at a charity auction by Ardai at the 2021 World Cheese Awards in Oviedo

The cheese that was opened surrounded by the absolute expectation of the public is not intended to be marketed by Vila Viniteca. Eva Vila, the head of Ardai, as master of ceremonies, accompanied this moment with a great tasting paired with wines at the Hotel Majestic in Barcelona, which brought together 500 personalities from the gastronomic scene.

The tasting of the cheese in question, which acquires an amber colour, and that intense flavour of undergrowth and truffle with hints of vanilla and liquorice, was added to that of five other wheels of Parmigiano aged 18, 24 and 54 months from the Montecoppe producer.
