If there is one dish that is going to be eaten a lot in Valencia during this Fallas week, apart from paella, it is pumpkin fritters, a traditional Valencian sweet that is closely linked to its festivities, as they emerged at the same time back in the 19th century. Their characteristic shape is round -although not perfect- with a hole in the centre. Although it is common to buy them in the street stalls where the ‘buñoleros’ prepare them, here we bring you the original recipe so that you can prepare the typical Valencian fritters at home. Don’t forget to accompany them with a hot chocolate – take note!
Valencian pumpkin fritters recipe
Ingredients (for 8-10 units):
- 250 g pumpkin
- Pumpkin cooking stock
- 125 g baking flour
- 5 g fresh yeast
- Olive oil
- Sugar
Preparation:
- Slice the pumpkin and cook until soft. Run it under cold water and remove the skin. Reserve the stock.
- Mash the pumpkin with a fork until it forms a dough. Add a little flour and the yeast and add the stock little by little. Mix well while adding the rest of the flour and the stock.
- When the dough is neither liquid nor firm, cover with cling film and leave to double in volume (about 30 minutes).
- Heat a deep frying pan with plenty of oil.
- Shape the fritters. With wet hands, take the dough and make the shape with the hole in the centre. Drop it into the frying pan and fry for one minute, turning it over halfway through cooking.
- Remove the fritter and place it on a plate with absorbent paper to remove the excess oil.
- Add sugar to taste and enjoy with a cup of hot chocolate.
