The Torres brothers’ star dish, ‘guisantes lágrima’, makes a comeback

This benchmark dish for lovers of haute cuisine returns to the Torres brothers' restaurant in Madrid, but this time with exclusive crockery designed by the porcelain artist Santos Bregaña.

Guisantes lágrima from Maresme, also known as Maresme green caviar, are undoubtedly a benchmark for food lovers. Now, the Torres brothers have revived this exclusive dish at their restaurant Dos Cielos in Madrid, together with their executive chef, Damián González. What’s more, this time this master recipe is served on exclusive crockery designed by Santos Bregaña, Spain’s most important crockery designer and ceramist.

This careful collaboration at Dos Cielos Madrid between signature cuisine and fine craftsmanship pays tribute, for one year, to craftsmanship and artistic talent, with this delicious ingredient as the protagonist, with a very short seasonality. They have only two floradas a year, one in winter and one in spring, both equally excellent. “For us, there is no doubt that the peas give life to one of our most iconic dishes, in which there are many years of refinement behind it. An exceptional product that can only result in an outstanding preparation, with the pea as the absolute protagonist”, say the Torres brothers.

For this season, the ‘guisantes lágrima’ will be served on the exclusive Sélavy crockery, designed by Santos Bregaña and whose idea is based on the work and thoughts of the artist Marcel Duchamp. The plates have been manufactured by the French luxury porcelain maison Bernardaud. This collection seeks to represent the reliefs drawn by nature itself. There are no straight lines on the plates, only sinuous shapes full of movement. The concept gives the Torres brothers’ workmanship an illusory sense of swaying that fills the tear pea dish with dynamism.

New spring menus at Dos Cielos Madrid

Taking advantage of the arrival of spring, Sergio and Javier Torres also presented the new menus that will be available at the Dos Cielos Madrid restaurant, located in the Palacio de los Duques Gran Meliá (Cuesta de Santo Domingo, 5).

On the one hand, you can try the Classic Menu, with nine dishes such as Lionesa de foie, Moqueca fish, Gamba Alistada de Huelva and carrot marinade, or Callos de Bacalao a la Madrileña, among others. It costs 75 € plus 35 € for food and wine pairing. In addition, they also have another Tasting Menu, with 12 exquisite moments, among which the “Raya en Pimentón”, the “Rodaballo Beurre Blanc y Caviar” and the dessert “Matcha Tea, Lime in Brine and White Chocolate” stand out. The price is 105 € plus 50 € for food and wine pairing.
