This will be Haramboure, Patxi Zumarrága and Patricia Haramboure’s new gastronomic venue

Patxi Zumárraga and Patricia Haramboure are preparing the opening of their new restaurant, Haramboure, at 4 Maldonado Street, in Madrid’s Salamanca district. “Sanding chairs to give them a coat of varnish. Giving a second chance to these beauties. There are 41 days left until our opening”, this is how they both announce this new project on their social networks.

After Zumárraga disassociated himself from Fismuler and La Ancha group, projects where Patricia Haramboure also worked, now both are linked in this new adventure, where they are 50% partners. The new restaurant plans to open the first week of September.

According to both of them in an interview with Gastroeconomy: “Haramboure is a second opportunity, a second life, for many reasons”. Zumárraga also highlights in that publication that he proposed to Haramboure to make a company as 50/50 partners. “I had some money from the sale of my shares in La Ancha. It is much easier to tackle the project together”.

Regarding the gastronomic offer, Gastroeconomy explains that Zumárraga will launch a business model where the main point will be the relationship with suppliers. Light cuisine, with technique, respecting the product. “I have been working for some time on something very nice and very complicated: to create a product platform, to have snitches in the inshore ports of Biscay, Guipuzcoa and Getaria. I am already closing very good deals with ships in Biarritz, Mutriku, Orio, Elantxobe. They tell me to bring in Norway lobster, bonito, lobster, hake…. And, based on that, I make the menu. The same with farmhouses that sell me vegetables”, he declares to Gastroeconomy.
