Byakuya -or ‘White Knight’- is officially the most expensive ice cream on the planet. This has been certified by Guinness World Records, announcing this delicious record on social networks: “It costs more than a vacation,” they warn. But those who have tried it say it is a glorious gastronomic experience.
“They say the aroma of white truffle floods the mouth and nose, followed by the complex, fruity flavors of Parmigiano Reggiano and sake lees,” they note on their website.
The creators of Byakuya, the Japanese ice cream brand Cellato, set out to conquer the Guinness World Records title by creating a unique dessert with unusual ingredients that fused the best of two worlds: Europe and Japan. And that exclusivity translates into a stratospheric price: 873,400 Japanese yen; or, in other words, 6,211 euros.
The most exclusive ingredients
“It is an ice cream of the highest quality made with abundant white truffle from Alba (Italy), with a sensual and unique aroma. A rich and smooth ice cream with two types of cheese as a base and sake lees, a traditional Japanese ingredient. Its faint sweetness gives a complex flavor to the aroma of white truffles,” explain Cellato, who commissioned their fascinating creation to Tadayoshi Yamada, head chef at RiVi, a restaurant in Osaka that fuses Italian and Japanese gastronomy with exquisite delicacy.
The ice cream is decorated with gold leaf, and is accompanied by two very special ‘extras’: white truffle oil and a metal spoon handmade by Takeuchi artisans in Fushimi (Kyoto). “The spoons use the techniques and materials used in the construction of temples and shrines,” they note.
Despite the milestone achieved, in Cellato they are already thinking about their next luxury ice cream, with champagne and caviar as star ingredients.
