This is the menu of NoDrama, the restaurant with a creative cuisine that changes every six months

As its name suggests, the NoDrama restaurant in Madrid practices a philosophy of life without formalisms or fear of change, which is perfectly reflected in its ever-changing menu. Led by Chilean chef Pablo Fernández, it offers a fresh concept of signature cuisine in which the most classic French techniques flirt with Spanish, Italian, Asian or Peruvian ingredients, both a la carte and in the tasting menu.

One of its peculiarities is that the dishes are renewed every six months, always with personal proposals based on quality raw materials and a fusion of the world that combines ingredients from different countries resulting in original flavors and a stimulating experience for all the senses.

Its menu, an explosion of flavors

NoDrama serves a tasting menu, Festival, which consists of 8 courses and costs 75 € (with a wine pairing option for 45 €). The current proposal starts with smoked sheep butter snacks with Galician sourdough bread, tomato and aji panca bell pepper tartlet with red tuna tartar and white miso, and pickled Galician mussels with aji amarillo.

Then, the show of flavors begins with dishes such as cherry tomato confit salad, balsamic 50 years, pear tomato sorbet and black truffle; the exquisite Motril shrimp in its own juice, huacatay oil and kombu; the egg in kataifi paste, with chicken chili and smoked caviar or the Chinese dumpling with squid ragout, shiitakes and laksa.

In the main course, the diner has the opportunity to taste the white tuna in hake and merquén pilpil and the tagliolino with lobster suquet, oysters, Osetra caviar and crème fraîche. It is a homemade pasta type paglia e fieno, green (spinach) and white. The final sweet touch is the Zacapa 23 year old rum babà with Madagascar vanilla ice cream.

Menu and wine cellar

For those who choose to order à la carte, the new dishes for fall will continue with the same traveling theme. From Scotch eggs in Italian sausage with Lardo di Colonnata I.G.P., to French potato gnocchi with Carril clams and bottarga, or a mellow rice with seasonal mushrooms and roasted quail.

It has also included other creations such as choco roe with burnt butter sabayon, wild salmon tartar with yuzu hollandaise and Japanese sansho pepper and nashi (Asian pear) or wild boar cannelloni with Thai red curry sauce and shiitakes. Among the desserts, proposals such as tarte tatin with vanilla ice cream or goat’s milk flan with molasses caramel, with an original recipe featuring chocolate.

As for the liquid part, the restaurant’s wine cellar has a total of 154 references, with the main Spanish D.O., but also other countries such as New Zealand, Chile, South Africa, Argentina, Portugal, Austria or France.

And if you feel like enjoying a more relaxed and lighter evening, it also has a menu of ‘fine tapas’, with Madrid-style tripe croquettes, crab bao or hamburger. These can also be enjoyed on the terrace, which is open until December.
