Madrid Fusion is one of the most important gastronomic events in the country and always leaves us great culinary milestones such as the election of the best Iberian ham croquette. Another highlight for tapas lovers is the Signature Sandwich Contest, which was also held during the first day of the congress and has decided the best signature sandwich in Spain during this 2024.
In this new edition, the jury was made up of leading figures from the hotel and catering, gastronomy and journalism sectors, such as bakers Antonio García and Jesús Monedero, food journalists Raquel Castillo and Juan Barbacil and chef Rafa Soler. The specialists were in charge of evaluating the proposals based on specific aspects such as the individual piece, the assembly with other ingredients and the presentation.
The winner was the preparation of chef Pablo Cadavid, from the restaurant La Yerbita in the Cantabrian town of Sobarzo. In this way, his creation the Bocadito Lebollito has won the award for the best ‘signature sandwich’ in Spain in 2024. This sandwich is a muffin stuffed with meat from the lebaniego stew, with mustard caviar, some sprouts and some radish crudités.
The decision, as always, was not an easy one. Among the finalists were also:
