There are many elaborations that are part of Taylor Swift‘s never-ending culinary era. One of them is chicken mughlai: a dish she would refer to in an interview with Elle magazine in which she revealed ’30 things she learned before she turned 30’. Number 10 on the list she dedicated to one of her great passions: ‘three recipes I know I will make for dinners for life’.
That list included celebrity chef Nigella Lawson’s Chicken Mughlai. A recipe with about 20 ingredients to combine in intricate steps to make one of Swift’s favorite dishes. Here’s how to make it.

The recipe begins by blending ginger, garlic, cumin, coriander and chili flakes to a paste over which ground almonds and water are added. The chicken thighs are then cooked in a large frying pan until golden brown.
After removing the chicken, Nigella adds cardamom pods, a cinnamon stick, some bay leaves and cloves to the pan, along with some onions. Once the onions are poached, the ginger paste mixture is added to the pan, along with the yogurt, chicken stock, cream and golden raisins.
Also add the chicken and sprinkle with a little garam masala, sugar and salt. Cover the pan and simmer until the chicken is fully cooked, which takes about 20 minutes. The final touch is a garnish of toasted slivered almonds.
