In winter, restaurant menus fill up with interesting options to warm up and feel at home. One of the latest new items is the menu at the Ático restaurant in The Principal hotel, run by the prestigious chef Ramón Freixa. His proposal is designed to be enjoyed in company while enjoying spectacular views of the centre of Madrid. Following the essence of Freixa, this new menu is characterised by offering a traditional and simple cuisine, but with a touch of imagination.

Diners will have two menus at their disposal. A tasting menu for €72 (without food pairing) and a lunch menu (Monday to Friday) for €45, made up of seasonal recipes and quality products, mainly Mediterranean and Spanish. A journey through traditional flavours with an innovative twist, perfect for coping with the cold weather at the beginning of the year. Among the dishes available are vegetable stew with stew broth and truffle, pumpkin cream with chestnuts and vanilla oil, and roast onion soup, duck confit and Compté cheese.
For those who love ‘calçots’, the chef has also left room for this traditional Catalan recipe, accompanied by crab ravioli, and the artichoke, which Freixa works in the form of a salad with fennel and citrus. Not forgetting his classics such as the well-known three-meat roast cannelloni with foie gras and truffle sauce or cod “as in freixa tradició”. And of course, it will also delight those with a sweet tooth, with the Sablé of roasted figs or the new rum-roasted pineapple with spiced coconut soup.

A San Valentín by Freixa
The most romantic diners will also be able to meet up at the Ático restaurant, thanks to Ramón’s proposal for Valentine’s Day. The “Valentine’s” menu by Ramón is designed to enjoy a special evening as a couple. In addition, the experience is accompanied by a massage. The special massage + dinner pack starts at €120 per person. The menu consists of 6 courses, 2 desserts and a welcome cocktail by the well-known bartender Daniel Cruz.
