Named Pabú, this culinary project stands out, above all, for its surprising factor: diners never know exactly what they are going to eat. A concept that the Infanta Elena chose to celebrate her 60th birthday with a sumptuous evening in the company of King Felipe and Queen Letizia, the emeritus King Juan Carlos and Queen Sofía, the Infanta Cristina with three of her children, Irene of Greece, Princess Alexia and the Infanta Margarita with her husband Carlos Zurita.
The restaurant run by the renowned chef Coco Montes, whose philosophy is micro-seasonal cuisine, stands out for working with the purity of simple cuisine centred on quality produce and its seasonality.
There, the Spanish aristocracy has been able to enjoy this gastronomic experience in which there are no fixed dishes, but rather they evolve depending on the raw material that Coco collects or buys that same day. They are structured around two menus: one called Paté (150€) which includes 1 appetizer, 2 starters, 3 mains and 2 desserts, and another called Bubú (110€), with 1 appetizer, 1 starter, 2 mains and 2 desserts.
