The nostalgia for the traditional colmado, which seems to have ceased to exist, or to have been transformed into a new concept, is united here with the love and tribute that the Hevia brothers wanted to pay to their father, Ismael Martín, a key figure in Madrid’s hotel and catering industry.
Martín Tostón is now presented as the continuation of his legacy from 112 Castelló Street, acting as a bar, a grocery store and a restaurant structured on two floors. A more informal one and a more elegant one staged over a lounge on the lower floor with low tables.
The family saga opens in 2025 with this opening focused on the product, on the reinvention of tradition through an ode to Spanish gastronomy and a tribute to the traditional groceries, with a display with products to buy with an offer of charcuterie, preserves and wines.
From breakfast, to the aperitif, lunch and dinner: the Hevia’s new restaurant-bar offers service throughout the day; starting with classics such as churros and porras or the mixed sandwich, to continue with appetizers such as gildas, torreznos, ensaladilla rusa, cockles, meatballs, tripe or chiporones en salsa. In addition to all this, there are other classics inspired by the ‘cañí’, such as a brioche of oxtail, a tuna tartar with the Balfegó house behind it, or tripe to savour Hevia’s experience and trajectory.
