Dabiz Muñoz has accustomed us to his legendary Sunday rice dishes, original paella proposals that never go unnoticed. And, although his recipes are to die for and the Madrid chef himself loves them, he has a favorite restaurant where they serve the best paella in the world. This is how Dabiz shared it in an Instagram post in which he showed how they prepared a traditional Valencian paella with snails and also a Senyoret rice. Dabiz Muñoz defined what he considers the best paella in the world as “amazing, overwhelming and overwhelming”.
The restaurant in question is Casa Carmela, which since 1922 and after four generations continues to offer a faithful traditional Valencian cuisine. The centenary restaurant, located in front of the Malvarrosa beach, continues to prepare Valencian paella according to the rhythms that marked the great-grandmother Carmen, founder with Don José of this place that began as a humble hut.

The secret of his rice dishes is to prepare them always with orange wood and only with ingredients from the land to reach that thin layer of rice and that smoky flavor of the fire that have made this dish an icon of Valencian and Spanish gastronomy in general. In the menu of Casa Carmela have a great prominence the rice to firewood, as the traditional Valencian paella (with snails), seafood, rice Senyoret, black rice or traditional Fideuà. They also prepare seafood rice dishes, beach lobster or lobster from the country.
