We finish our particular gastronomic route through Tapas Magazine’s T de Oro restaurants of 2023. On this occasion, we discover the AMA restaurant, brand new winner in the Basque Country. It is a proposal by Gorka Rico and Javier Rivero that you should definitely visit and experience in your own flesh. “Local protects us”, reads the entry on the website. Ama is a restaurant run by two friends who met at the Basque Culinary Center while they were studying a degree in gastronomic sciences. Their discourse is forceful as is the cuisine they prepare. Fish, poultry, game, offal or vegetables with names and surnames, to which they apply culinary management in casseroles that smell of time and that forgotten patience of the stew cook. Roasted leeks, pocha beans with foie in homage to Hilario Arbelaitz, hake with ear broth or stews that enhance the figure of the sheep are in charge of satisfying the palate.
