Beyonce’s physique has always caused a lot of expectation. Knowing what the artist eats and what is her workout routine is something that interests a lot, especially in social networks. A few years ago, the Texas Hold ‘Em singer followed a strict vegan diet for 22 days, designed by her nutritionist Marco Borges, with which she lost about 22 kg. For a while, Queen B followed a totally vegan diet, although currently she is not 100% vegan, Beyonce promotes a plant-based diet and has some vegan dishes among her favorites.
In addition, a few years ago, her nutritionist Marcos Borges shared on the Today show which were Beyonce and her family’s favorite vegan dishes. From a rainbow quinoa salad -for the variety of ingredients and colors with kale, chickpeas, corn, tomatoes or avocado- to the Mac & Cheese plant-based with cauliflower. And Beyonce’s favorite vegan dish: lettuce tacos with mushroom ‘chorizo’. Borges shared her recipe, so if you feel like making it at home, we leave you with this original and healthy dish, which is Beyonce’s favorite. Take note!
Lettuce tacos with mushroom chorizo recipe
Ingredientes:
- For the ‘chorizo’:
- 250 g mushrooms
- 180 g walnuts
- 6 dried tomatoes
- Chopped garlic
- Ground cumin
- Smoked paprika
- Freshly ground black pepper
- Cayenne pepper
- Sea salt
- For the rest of the ingredients:
- 1 lettuce with leaves separated and stems removed
- Half a can of corn, drained
- Cherry tomatoes
- 1 avocado
- Chopped fresh parsley
- Lemon slices
Preparation:
- First prepare the ‘chorizo’. To do this, put all the ingredients in a blender container and combine them in a food processor, until everything is well integrated and a compact mass.
- Then, in a frying pan over medium heat and with a drizzle of oil, fry the ‘chorizo’ stirring well and avoiding burning, for about 5 minutes or until golden brown.
- Then, to assemble the tacos, take a lettuce leaf, add the ‘chorizo’ and also add the drained corn, the halved cherry tomatoes and the sliced avocado.
- Add a drizzle of oil, garnish with parsley and serve with a slice of lemon for garnish.
