The ‘wagyu’ ice cream that triumphs in China (and where to try it in Madrid)

If you arrive when ordering dessert you get this dish, you might find it a bit surprising because, apparently it is a meat dish. But it’s actually an ice cream called Wagyu Bingshu (literally translated as “cow ice cream”) and it’s the latest craze in China. This trompe l’oeil is a refreshing ice cream made with shaved ice, yogurt and frozen strawberry syrup with yogurt, which is what gives it that wagyu look.

It is causing a sensation in the Asian country and has recently arrived in Madrid where it can only be tasted in the legendary Xiao Longkan restaurant, located in the Legazpi area, becoming in a very short time its authentic star dessert. It is homemade and, both its appearance and taste, will not leave you indifferent.

An authentic Chinese hot pot

Xiao Longkan is one of the most successful hot pot chains in the world, with more than 800 stores in China and a presence in 10 countries, including Spain with this establishment in Legazpi.

Before tasting the wagyu ice cream, you can enjoy delicacies such as traditional Chinese fondue, duck blood, goose intestines, pork aorta, lotus flower root, bamboo mushroom, dong gua vegetable, beef cheek, tripe, beef tendon, duck sweetbreads, etc. Ingredients of excellent quality that the diner will cook in the pot, after choosing with which broth he/she wants to cook it.

In the dessert section, in addition to the Wagyu Bingshu, you also have at your disposal sweets such as the Yogurt Bingshu (composed of natural yogurt, whipped milk and shaved ice), the Mango Bingshu (with natural mango, shaved ice, condensed milk and mango syrup) or the Sakura mochis (filled with a soft cherry blossom mousse) or Matcha (filled with matcha tea mousse).
