The trick of the ham carver friend of chef José Andrés to achieve a perfect cut

Chef José Andrés appears every Sunday on American television with a program in which he tours Spain with his family, discovering the gastronomic traditions of our country to Americans. Along with him, several professionals from the culinary world appear on CNN to help him discover Spanish culture.

In the program on October 8, José Andrés will be accompanied by a ham cutter, Carlos Sánchez Gonzalo, who will teach him the best way to present a plate of this Spanish delicacy.

Carlos is the CEO of Los Finos, a team of ham cutters who go to individual events to offer them the best ham. He presents it with a special plate, made to place the slices of ham, which he splits in situ, in a spiral.

It’s not what it seems

To achieve a perfect cut, Carlos Sánchez Gonzalo has a technique that is difficult to grasp even if you see it in person. The professional cutter seems to do his job by moving the knife back and forth, but in reality, that is not the case.

«I do it in a circle», explains Carlos. “I go out and I go in”, he adds, and he goes “in one direction”. To get the job done, he uses a special ham holder to make sure the leg stays secured and is loose. From a single leg, he gets up to 4,000 slices of ham.
