Last October, the Tiramisù World Cup took place in Treviso, the town in northern Italy where tiramisu is celebrated every year as a gastronomic emblem. The Valencian Nadia Ceoldo, without a professional career in confectionery or gastronomy, would be awarded there for her delicious original recipe; while Isabella Bucciol, from Portogruaro, would be awarded for her creative recipe (discover it here).
The jury would evaluate a series of requirements such as presentation, taste and execution. Nadia’s recipe managed to perfectly execute each of them, eclipsing the rest of the 239 contestants and captivating the jury with her tiramisu made with only six ingredients: eggs, sugar, mascarpone, sponge cakes, coffee and cocoa.
We leave below the recipe and the culinary process of Nadia Ceoldo’s tiramisu so that you can recreate it at home and create a sensation among your guests.
The recipe
Beat the sugar and egg yolk until light and fluffy. Add the mascarpone and beat with an electric whisk until well incorporated. Shape the sponge cakes with a pastry cutter and place them in the bowl, starting to make the tiramisu.
Dip the biscuits in the previously prepared coffee for a few seconds, taking care not to soak them too much. Spread a generous layer of mascarpone cream and continue with the second layer, repeating the order of the ingredients. Complete with a decoration using a piping bag and a drop nozzle. Insert the carved template and cover both the tiramisu and the template with bitter cocoa. Finally, carefully remove the template and, finally, also the cookie cutter.
