Although the highly anticipated second season of The Bear has already premiered in the United States, the new episodes will not be available in Spain through Disney+ until August 16. From Tapas we have already seen what’s cooking -never better said- in the 10 new chapters: lots of drama, stress and, of course, lots of recipes. We will try not to make too many spoilers, but below we review all the dishes and recipes that appear in this second season of The Bear. Take note!
Quite a lot of pasta
In episode 2, titled Pasta, a pasta recipe obviously appears. While Carmy is cooking fresh pasta, Sydney narrates a fateful anecdote from her last caterer, when her fresh pasta fell apart and she had to serve the slow-cooked lamb ragu with sweet Hawaiian rolls. Another dish featured in this chapter is Sydney’s lacto-fermented pickles, named when they are defining the restaurant’s new menu. Apparently, they are too sour.
In Sundae, Chapter 3, is also full of dishes and recipes of all kinds. For example, a salad with hot orange sauce appears that is quite salty, or the appetizing sandwich with chili and rosemary that Sidney has for breakfast on her taste-testing day. There’s also room for a plate of tortellini stuffed with ricotta, handmade and bathed in a brown butter sauce over a green sauce (the garnish includes basil, pine nuts and parmesan, a pesto spice).
As for the sweet part of this episode, the highlight is the appearance of a delicious mango tart made with thin puff pastry dough, toasted coconut cream, thin slices of mango and a little lime zest. And, honoring the title of the episode, Sydney prepares her own Sundae when she picks up a plate at Margie’s Candies (Chicago) where the bowl includes a vanilla ball, a pistachio ball, several spoonfuls of whipped cream, a drizzle of hot chocolate syrup and a cherry on top.
Also seafood dishes
In this new season there is also room for fish. For example, in episode 6, titled Fishes, two recipes from the sea appear. On the one hand, Donna’s baked lobster and also the branzino that Donna roasts to perfection, one of the typical dishes of the Berzatto family in The Bear. And on the other side, a tuna casserole. At that same Christmas dinner they also serve Sicilian-style stuffed artichokes and for dessert the classic cannoli.
In the final stretch of the season, in the seventh episode Forks, reference is made to the typical Chicago-style pizza, with a thick, deep and crispy bread base, and filled with lots of cheese and tomato sauce, plus the ingredients you want. Thus, in episode 9, entitled Omelette, Sydney prepares a French omelette with plenty of butter in the pan and, when plating it, adds French fries with onions, sour cream and chopped chives. In the last episode, among all the food that appears, a very fluffy focaccia stands out.
