The restaurant Plademunt – El Restaurante Imaginario has won the award for the Best Russian Salad of Madrid 2024. A recognition that the Association of Chefs and Pastry Chefs of Madrid (ACYRE) would grant to Iván Plademunt’s traditional recipe, which stands out for its innovative creative twist.
The Spanish chef’s salad was elevated to the podium of the contest by the jury, who valued his technique and culinary talent, as well as its infallible combination of organic ingredients from Madrid, among which are the free-range eggs from Granjas Villarreal, carrots from Naturhuerto or organic extra virgin olive oil from Alma de Vinos y Aceites Laguna. In addition, the chef adds a special combination of flavors with ventresca and anchovy tuile.
The mayonnaise is emulsified half with olive oil from Madrid and half with oil from the canned ventresca, which is also bottled in the restaurant’, explained the chef about his recipe.
In the competition, Plademunt, located at Calle Francisco Díaz 1, managed to stand out among a total of 25 Madrid restaurant establishments, which presented their recipes at the event. Among them, 12 finalists would be selected to fight for the final prize.
The requirements were as follows: the ensaladilla had to include products with the ‘M’ for Certified Product, a mark that guarantees the origin and quality of Alimentos de Madrid.
Meanwhile, Jorge Baeza Manzaneque‘s Balear restaurant came in second place, with a recipe using baked Ibizan potatoes and emulsified mayonnaise, enhanced with the liquid from the pickles, piparras and anchovies.
