Candeli once again showcases the best seasonal produce through the art of grilling and traditional market cuisine from its elegant premises located on Calle Ponzano. Once again this year, the Rivera brothers have decided to serve Catalan tradition at their tables with a menu to celebrate the calçot season.
Known for being grown mainly in the region of Valls, Tarragona, their calçots now become the protagonists of Candeli’s new seasonal proposal, cooked on the grill.
‘We keep a live flame during cooking to ensure that the calçot burns on the outside, achieving that characteristic smoky and tender texture on the inside,’ they explain from the Candeli kitchen.
The ritual is accompanied by their classic romesco sauce, prepared in a traditional way and with a delicious twist in which nuts such as almonds add a sweet and smooth touch to the mixture.
Calçotada Candeli style
The Calçotada Menu -priced at €52-, conceived to be enjoyed as a couple, starts with a crunchy tumaca bread, followed by grilled calçots, served with a romesco sauce, perfect for enhancing their smoky flavour. After the main course, the restaurant offers a creamy cod brandade au gratin and a juicy butifarra sausage with monchettes.
The traditional evening ends with tender suckling lamb chops with fried potatoes, and a Catalan custard for dessert, topped with a crispy caramelised layer. To accompany this gastronomic journey, Candeli offers the red Cosme Palacio Crianza 2019 D.O. Rioja, priced at €28.50 a bottle.
