Chispa Bistró opens the year with a chef friend of the house on January 23: Juan D’Onofrio and Gabriel Sodré invite Carlos Urrutikoetxea to their restaurant to jointly elaborate a “Sea and Mountain” for lunch and dinner. The open and international cuisine of Chispa Bistró joins the Basque chef’s techniques and handling of seafood to create six new dishes in which his six hands will participate. The menu will not be a union of dishes from both chefs but goes beyond: it will be a succession of dishes created by Juan, Gabriel and Carlos that can be enjoyed at Barquillo, 8 for one day only.
The chefs are already working on a proposal in which they will unite their ways of understanding cooking, in which the ember will play a leading role and in which international references applied to the product will be the common thread. In total, 60 seats will be offered, distributed between lunch and dinner service to enjoy this “Sea and Mountain” menu on Monday, January 23 at a price of 150 euros per person.
The paths of Juan, Carlos and Gabriel came together when the first two met while working at the Bilbao restaurant Mina (one Michelin star). Currently, their proposals share a neighborhood and their trajectory shows that haute cuisine is increasingly manifesting itself in more formats and that Madrid welcomes national and international chefs to accommodate different gastronomic proposals.
