The legends behind Celler de Can Roca are moving beyond Spain to launch a new permanent dining experience in collaboration with The Macallan. The restaurant, known as ‘TimeSpirit’, will open its doors on October 30, and will feature two tasting menus: one at lunchtime for £60, and one for £95 for dinner service.
Joan Roca would reveal this surprising news for the gastronomic world during his speech at the San Sebastian Gastronomika congress. I have to give you a scoop. We have always said that we would not open a restaurant anywhere else in the world…. Well, we will’, said the chef from Girona. The new restaurant ‘TimeSpirit’ will be located in Scotland, in Speyside, inside the Macallan whisky distillery, and, as its name evokes, it encapsulates the spirit of Macallan time.
Joan, Josep and Jordi Roca will dilute their culinary talent with the legacy of Macallan in this new project entitled ‘The Macallan TimeSpirit x El Celler de Can Roca “TimeSpirit’ with which they also pay tribute to the 200 years of the brand. To their historical relationship of more than 12 years with the distillery, with which they have always maintained a special synergy.
Based on this idea, they will jointly explore the past, present and future of The Macallan to give rise to a unique culinary experience in what will be their great international culinary debut. All of this will take place at the heart of the distillery in Sepyside, with a 30-seat dining room designed by architect David Thulstrup, who is behind the Noma restaurant in Copenhagen.
The restaurant will be open from Thursday to Saturday during midday and evening hours, and on Sundays only for meals.
