The sweet recipe book of Spanish gastronomy is very broad, varied but, above all, delicious. One example is arnadí, a traditional dessert from the Valencian Community, specifically from the area of Xàtiva, which has Arab origin and its main ingredient is pumpkin. In addition, pine nuts and almonds give it a crunchy touch. And the best of all is that it is prepared in a very simple way. We leave you the step by step recipe of arnadi so you can prepare it at home.
Arnadí recipe
Ingredients:
- A pumpkin of 1.5-2
- 800 g sugar
- 4 egg yolks
- 250 g ground almonds
- 50 g pine nuts and almonds (all peeled)
- 1 grated lemon rind
- Powdered cinnamon
Preparation:
- Preheat the oven to 200 ºC and bake the pumpkin for 1 hour (you can also boil it).
- Then mash the pumpkin pulp. Put it in a cloth bag and leave it overnight to drain naturally.
- After that time, mix the pulp with the sugar, the beaten egg yolks and also add the ground almonds, the cinnamon and the grated lemon rind.
- Meanwhile, put it all in a saucepan and cook over low heat for 15 minutes, while stirring to integrate everything (and pouring the ingredients).
- Let it rest and form a kind of pyramids. Place them in earthenware dishes and sprinkle with pine nuts and almonds (you can toast them before).
- Preheat the oven again, this time to about 150 ºC and bake for a few minutes until the dough is golden brown. You can sprinkle with sugar.
