The innovative Catalan chef closes one stage to open a new one based on his avant-garde philosophy with which he constantly reinvents himself. Ramón Freixa has just announced the opening of a new restaurant, as well as the closure of his current two-Michelin-starred restaurant located in the luxurious Hotel Único Madrid. The closure will take place in December 2024, bringing the year and a legendary 15-year collaboration to an end.
His new restaurant of the same name, to be located at 24 Calle Velázquez, will be called ‘Ramón Freixa’ and will revolve around two concepts represented in two spaces: a traditional restaurant and a gastronomic one. Tradition and the avant-garde will once again collide in what will be his most personal solo project.
I am very happy to announce this new stage, which is a dream come true. I am living my best personal and professional moment to take on this great solo project with which to reaffirm, even more if possible, my commitment to tradition and the avant-garde’, says Freixa.
I would like to thank Pau Guardans, president and founder of Único Hotels – he continues – for these 15 years cooking happiness in what has been my home, in the Único hotel. We will continue with this project until the end of 2024 with the same enthusiasm and gratitude with which we have worked during all this time’, explains Ramón Freixa and concludes: “this is a temporary farewell to our customers and friends, a goodbye so that we can soon welcome them with all our enthusiasm in my new home”.
During this new era, Ramón Freixa will manage several projects at the same time: the construction and preparations of his new restaurant, as well as Ramón Freixa Catering and the Atelier, a space from which he will continue to serve his proposal through different meetings.
