Quique Dacosta’s rice kits arrives at Petramora

‘A Fuego’ is the chef’s line with which to prepare one of his star dishes from home.

‘Passion for things well done is cooked A Fuego, beauty is cooked A Fuego, life is cooked A Fuego. We could do it differently, but it wouldn’t be A Fuego, and it wouldn’t be us’, says the chef about his new range of rice dishes with which you can make an authentic Valencian rice dish at home in just 20 minutes.

Dacosta has designed three kits made up of all the necessary ingredients and elements with which to prepare three versions of rice under the seal of haute cuisine. Each one includes a bag of Albufera rice, a jar of homemade stock and a second jar with the rest of the specific ingredients to make it.

First, the collaboration offers a kit to make black rice, which includes fish stock, cuttlefish cubes, cuttlefish ink and octopus; another with ribs -with beef stock, pork ribs, chicken, mushrooms and vegetables-; and a version of Valencian paella with beef stock, rabbit, chicken, garrafó and flat beans.

An ode to Valencian rice

Rice has become a key element in Quique Dacosta’s culinary DNA, which he has reinterpreted throughout his career, fusing tradition and the avant-garde for his restaurants in London, Madrid, Valencia and Denia, where he has an elegant enclave known as ‘Arros QD’ in which rice is presented as the centrepiece of his menu.

All his knowledge, research and development processes with which he has managed to create the most exquisite rice dishes in the world are also immortalised in his book ‘Contemporary Rices’ published in 2005.

Both rice lovers and lovers of the chef’s cuisine will be able to recreate his speciality at home thanks to these rice kits that range from 47 to 49 euros. These products will be available both on his website and physically at Petramora, the Domínguez family’s cult gourmet shop on Calle Barquillo.
