Pan de Calatrava recipe, the traditional dessert of murcia

Today we bring a recipe for those with a sweet tooth and also for those who defend the cuisine of use. Pan de calatrava is a traditional dessert from Murcia, although its origin has several theories. It is very similar to the flan but with the addition of using leftovers from the previous day, either bread, cakes or muffins. So, if you don’t want to waste those leftover pieces of bread, get to work to make this delicious pudding.

Pan de Calatrava recipe

Ingredients:

  • 4 eggs
  • 500 g sugar
  • 1 l milk
  • 50 ml water
  • Bread from the day before, 6 muffins or sponge cakes
  • Grated lemon peel

Preparation:

  • In a large bowl, beat the eggs and add 450 g of sugar and continue beating.
  • Add the milk and beat again. Reserve the mixture.
  • To prepare the caramel, in a saucepan over low heat pour 50 ml of water and 50 g of sugar, until it melts.
  • Then pour the caramel into the mold.
  • Place the bread (or whatever you choose) on top of the caramel and pour the mixture you made earlier.
  • Place the mold on a baking sheet and cover the base with water to make a bain-marie.
  • Bake at 150º for approximately one hour. Remove from the mold and let it cool. You can add cream and lemon zest.
