Dabiz Muñoz posted a few days ago on Instagram a video in which he appears adding an unexpected ingredient to his paella. With the rice almost finished, Muñoz begins to grate dark chocolate on top, as if it were a spice to finish the dish with that sweet and bitter touch.
Grate dark chocolate over the hot paella. Let it melt, release its fat and adhere like a glove to the rice grains… the contrast with the trout roe and pickled partridge is out of this world. This paella can’t be explained; life can be wonderful’.
The controversial paella of the best chef in the world can also be seen in another video that he himself shared, which is titled under the name: ‘Paella achocolatada de escabeche de perdiz a la toledana, niscalos y mole negro 🇲🇽’. Although this is another of Dabiz Muñoz’s experimental paellas, like his famous ‘Paella a la cubana’, this dish has aroused more hatred than ever before, leading countless detractors to criticize him for adding chocolate to this classic of national cuisine.
However, the chef himself has wanted to turn the matter around, taking it with humor, sharing one of those comments in his stories, which reads as follows: ‘This gentleman should be banned from entering Valencia’. And you, would you try Muñoz’s paella with chocolate?
