In a week of celebration for the people of Madrid, with the streets full of chulapos and chulapas who want to enjoy the festivities of their patron saint, we want to add our foodie touch, proposing a route with the best callos a la madrileña that can be tasted in the capital. It is one of the most traditional recipes of Madrid and, therefore, the vast majority of traditional bars and restaurants include it in their menu. Zalacaín
Zalacaín is an authentic gastronomic temple of the capital and its callos is also at the height (in 2021 they won the IV edition of the World Tripe Championship). Chef Jorge Losa is in charge of the recipe and its preparation follows the traditional steps. In addition to the quality of the product and the balance of ingredients (60% tripe, 20 of leg and 20 of snout), the most important thing for Losa is the time, as these tripe takes two days to be cooked. Its price is 33,50 €.

Casa Felisa
The temple of good food in Madrid gets more chulapo than ever. From this Friday, May 12 and until next Monday, May 15, will be available off menu a recipe for tripe that you can not miss. There is no better way to celebrate San Isidro than with some good tripe from Casa Felisa.

La Guisandera de Piñera
This restaurant pays tribute to those grandmother’s recipes and those typical stews with a lot of simplicity, but very tasty. Here they prepare some callos a la asturiana by Pedro Martino, an Asturian chef who advises the restaurant and with a great career. In fact, Pedro himself is the organizer of the World Tripe Championship that is held every year in this restaurant. So he knows a lot about tripe. You can try them for 19 €.

Zalamero Taberna
Precisely this restaurant was one of the finalists of the World Championship of Callos in 2023. In Zalamero Taberna they serve a very Madrilenian Callos for 17 €, although you have the option to order a half portion for 12 €. It is a tavern of wines and traditional cuisine but updated and, above all, very Madrilenian.

Montia
If you want to try some tripe with a star, you should opt for its tasting menu Montia XL de Primavera, whose star dish is the Montia Callos. In fact, according to the restaurant itself, the usual ritual during the service of the menu is to detail the dish, its preparation or give some indication to the diner. However, with this specific recipe they only urge to enjoy them. Undoubtedly, the Callos are their essence (and essential). The price of the XL Menu is 115 €.

La Tasquería
Casquería of haute cuisine to enjoy a good callos a la madrileña. Here they reinvent the culinary tradition of Madrid, always with great respect for the product and giving it a fun presentation. They define themselves as “casqueros” and throughout their history they have served more than 6,000 kg of tripe, leg and snout. You can try them a la carte for 19 €, they are also included in their Tasquería XL menu for 80 € in total and you can even order them for delivery.

Taberna Delfín
It was another finalist in the last World Championship and its history is quite curious. This tavern located in the neighborhood of Usera was run by Paco, known throughout the neighborhood. When he retired, the bar was acquired by Ming Heng Chen. And he did it in exchange for his previous owner teaching him how to prepare all his recipes. He managed to keep his regular clientele and continues to serve some finger-licking Callos a la madrileña.

TresPorCuatro
It was another of the Madrid restaurants that made it to the final of this year’s Championship. At TresPorCuatro they have them on the menu all year round and it is a dish they love, and so do their diners. Don’t forget to enjoy them with lots of bread. The price is 18 € for the whole portion.

La Tasquita de Enfrente
Although Juanjo López’s cocido at La Cocina de Enfrente is well known, the callos at La Tasquita are no less so. Here they are called ‘Callos Gaona’, in homage to his father’s original recipe. They have a spicy touch and are usually served with a fried egg on top. As Juanjo himself says, “they don’t fail”. Their inclusion in the menu may depend on seasonality.

Ovillo
We finish this traditional route in the winning restaurant of 2022. The recipe of the chef Javier Muñoz Calero stands out because it replaces the chickpeas with mongetes. One of his secrets is that he smokes them before cooking them. “And also that they have a broth with a lot of leg and a lot of snout that makes them very unctuous,” said the chef in the previous contest.
