There is a restaurant in New York that has captured all the spotlights in the city, and even the world for one particular elaboration: its ‘Royale with cheese‘. A sandwich inspired by ‘Pulp Fiction’ that contains the most expensive beef in the universe: Miyazaki wagyu sirloin, which is one of the most expensive cuts on the market, imported directly from Japan.
The ‘Royale with cheese’ is served at Manhattan cocktail bar Sip&Guzzle as a sumptuous bite to which is added an aged cheddar variety, layers of chopped onion, shio koji, brown sugar and a Japanese barbecue sauce made with wasabi, smoked soy sauce, tomato and rice vinegar. The fluffy milk bread that coats the culinary gem also comes from Tokyo, from the Guinza Nishikawa bakery.
It is an elaboration devised by Mike Bagale, former executive chef of Chicago’s three Michelin-starred Alinea, who oversees the kitchen at Sip & Guzzle. Mike is known for his progressive and experimental cuisine with which he creates a menu that pays an evolving tribute to Japanese culture through quality produce reinterpreted under an artistic vision.
The sandwich is presented on an imaginative golden tray designed by HMH Iron Design, from the basement of the restaurant: enclave in which the Sip space is located. Meanwhile, Guzzle, located in its upstairs, offers an extensive cocktail menu and one of the best ham sandwiches in the world.
