Kassie Mendieta runs a home bakery and creates creative cakes and lots of viral content related to the world of baking. She uses a disruptive approach to sculpt innovative works inspired by music, art, fashion and even her own childhood. Los Angeles-based Mendieta (@ibakemistakes) has managed to take some of her recipes to the top of TikTok, such as her perfume cake that takes its cue from Casamorati’s Lira fragrance. So I’ve been making cakes that taste like perfume to test my theory that […] what smells good together tastes good together,’ Kassie began in her video presentation.

Her creative process for making them is as follows: ‘The way I do it is to take all the edible olfactory notes of a perfume and infuse them into the components of my cakes,’ she continues, before noting that Lira contains notes of ‘blood orange, lavender, rose, jasmine, cinnamon, bergamot, liquorice, vanilla and caramel’.
‘From here, I let my brain start to think about the different flavours and decide where each would fit best – should I make a bergamot oil chiffon or a bergamot curd? Should I fill the cake with rose and jasmine pastry cream or just steep it in a floral milk tea?’ she continues.

‘We know that aroma and flavour are related, yes of course, but never in my life would I have thought of pairing anise and fennel with jasmine, you know what I mean! “The act of making these perfume cakes is really my form of ”art for art’s sake’ I’m not developing these recipes too much, I’m taking my pre-existing recipes and making flavour changes to make them work. For example, changing the olive oil to bergamot oil,’ she says in one of her posts.
