Jordi Roca teaches us how to make the most of stale bread

After having expanded the Rocambolesc universe to La Roca Village shopping center, Jordi Roca stars in a new costumbrist episode of his saga entitled ‘Cosas de Casa‘, in which he relegates experimental pastries to the background to put the focus on a kind of amateur cuisine that we can all replicate at home. And he does it now taking advantage of stale bread as the main ingredient to give it a delicious twist connected to Roca’s ‘sweet life’.

The chef decided to share a recipe yesterday, October 16, to celebrate World Bread Day. And it’s not the classic torrijas, but a very sweet and creative iteration linked to Rocambolesc.

Here are all the ingredients needed to make it, as well as the culinary process to prepare this recipe crowned with a chocolate ice cream of your brand.

INGREDIENTS

  • 250ml milk
  • 250ml cream
  • 50gr sugar
  • 100gr of egg yolks (or 3 yolks)
  • Cinnamon and lemon peel

INSTRUCTIONS

First, cut the bread into slices. Add the cream, milk, sugar and pasteurized egg yolks to a saucepan. Heat to 85 degrees and add the cloves and cinnamon. Allow to cool and pour into a bowl with the breads, soak, dry a little with paper towels and sauté in a pan with butter and sugar. Serve hot with a wonderful ice cream from @rrrocambolesc ☄️🙌🏻.
