Castilian soup is a traditional grandmother’s recipe that is never missing in the menu of those who love spoon dishes. When winter comes, it becomes a must, as it allows you to warm up and it is a consistent and very easy to make meal. If you want to prepare a good Sopa Castellana or garlic soup at home, we leave you the simple step by step below.
Sopa castellana, grandmother’s recipe
Ingredients:
- 2 eggs
- 5 cloves of garlic
- 8 slices of bread
- 80 g of diced Iberian ham
- 500 ml of meat broth
- Hot paprika
- Olive oil
- Salt
Preparation:
- Slice the garlic cloves and set aside.
- Then, in a large saucepan, pour a good splash of oil and sauté the garlic until it begins to brown, without burning. Add the diced ham and sauté. Add half of the bread slices and turn them over and over to toast them a little, without overcooking them.
- Remove from the heat and season to taste with salt and pepper, with a pinch of paprika.
- Stir everything well and return the casserole to the fire, adding the meat broth, over low heat, without boiling, for 20 minutes.
- Finally, add the rest of the bread slices -previously toasted-, and let them float in the broth.
- To finish, break the eggs into the casserole and let them cook like this, poached or spun.
- Serve in a bowl and enjoy the delicious Castilian soup.
