How to prepare pericana, the ideal recipe from Alicante for the Christmas Eve menu

If you still have not decided the Christmas Eve menu, today we bring you an easy and very delicious starter, which is sure to succeed at your table. It is the pericana, a typical recipe from Alicante that you can prepare with ingredients that we always have at home and will solve the appetizer section, as you can accompany it with many dishes. We show you the step by step below.

Pericana recipe

Ingredients:

  • 1 loin of dried salted cod (or capellan)
  • 4 dried chorizo peppers
  • 3 peppers
  • 2 cloves of garlic
  • Olive oil

Preparation:

  • First roast or fry the peppers in a pan.
  • Peel the garlic, chop it and do the same with the peppers (removing the small seeds).
  • Once ready, crumble the dried cod into small pieces.
  • All that remains is to mix all the ingredients in a pot and add a good splash of olive oil.

This recipe is similar to the typical esgarraet, another traditional Valencian starter; but this one uses salted cod.
