How to prepare nettle soup, a homemade recipe with lots of properties

Spoon dishes are the real protagonists when the cold weather arrives -which this year has been a long time coming-. If you want to try a hot recipe different from the usual ones, today we bring you a nettle soup that, besides being delicious and comforting, is a dish that has a lot of beneficial properties for your body. This plant, the main ingredient of the soup, has diuretic properties, in addition to providing a great supply of fiber, strengthening the immune system and helping to reduce cholesterol. We show you the step by step so you can prepare it at home.

Nettle soup recipe

Ingredients:

  • 500 g fresh nettles (young leaves)
  • 1 zucchini
  • 1 leek
  • 2 cloves of garlic
  • 2 onions
  • 1 bay leaf
  • Vegetable broth
  • Olive oil
  • Salt

Preparation:

  • First wash the nettle leaves well with gloves to avoid any stinging. Do the same with the rest of the vegetables. In a pan with hot water, boil the nettle leaves for a few minutes.
  • Chop the leek, the zucchini, the garlic cloves and the onion.
  • In a pan with oil, cook the leek, onion and zucchini, and add the chopped garlic cloves until golden brown.
  • Then add the finely chopped nettle leaves and stir well.
  • Finally, add the vegetable stock to the casserole and boil for 30 minutes over medium heat. Add salt to taste.
  • Blend until a thick mixture is obtained. You can add a little ground turmeric to give it more flavor.
  • Serve with a drizzle of olive oil and a mint leaf.
