In the traditional Spanish recipe book we can find a lot of dishes with eggs as protagonists. Today we bring you a classic among classics: huevos a la flamenca, a traditional recipe that never fails. So if you want to get down to work, here is a step-by-step guide to prepare this typical Andalusian dish that is delicious.
Flamenco style eggs recipe
Preparation:
- First, in a pot with water, cook the peas for 10 minutes until tender. Drain and set aside. This, if they are frozen, if they are canned you can sauté them just a little.
- On the other hand, cut the tomatoes, remove the pulp and grate well (you can also opt for crushed tomatoes from the jar). Finely chop the onions.
- In a frying pan with a splash of oil, sauté the onions together with the chopped garlic cloves over medium-high heat for 10 minutes (controlling the heat so that they do not burn).
- Then add the chorizo in small slices, along with the sweet and hot paprika. Stir well so that all the ingredients are integrated. Pour a splash of sherry vinegar at the last moment.
- Add the tomato and cook for another 10 minutes over medium heat.
- Then add the peas, the diced Serrano ham and continue stirring for another 10 minutes.
- Cut the potatoes into small cubes and fry them. The last step is to prepare the fried eggs.
- When you have everything, assemble the dish. First pour the potatoes with the other mixture. And crown with the fried eggs.
- Another option is to place the tomato and potato mixture in an ovenproof dish and bake for 5 minutes, cracking the egg on top so that it cooks in the oven.
- Don’t forget to serve it with bread for dipping.
