Back in 2009, Taylor Swift set the oven on fire on social networks with a recipe that has been endlessly replicated by her followers ever since. And that’s Chai cookies with egg poach glaze.
We rescued her recipe so you can now add it to your booklet. According to the pop icon, there are two ways to make them. ‘The quick and easy way is to make sugar cookies with a sugar cookie mix and simply open a packet of chai tea and pour it into the dough as you make it. Because you’re busy and want to make cookies a cool part of your day. Pow. Done,’ Swift shared at the time.

Joy the Baker reinterprets this preparation, and offers us on its website all the steps to make the Chai butter cookies.
In a large bowl, beat the butter, 1 1/3 cups of sugar and the chai tea mixture until light and fluffy. Fold in the eggs one at a time, mixing well after each one. Mix in the flour, baking powder and salt; stir into the batter until all the flour is absorbed. Cover the dough and refrigerate for 1 hour.
Preheat oven to 200°C. Shape the cookie dough into walnut-sized balls and roll them in sugar. Place the cookies on greased trays about 5 cm apart and flatten slightly with the tines of a fork. Bake for 10 to 12 minutes in the preheated oven, until the edges begin to brown.
Once the cookies are baked, you need to add their big special touch: eggnog frosting. ‘If you want to make frosting for them, just mix 1 cup powdered sugar with 1/4 tsp nutmeg, 1/4 tsp cinnamon and 3 TAYblespoons <–(I’m so annoying, it amazes me sometimes) of milk or eggnog if you can find it this time of year. The more milk/eggnog you add, the more frosting it will be. But frostings are legit too, so basically live your life’.
