Back in 2021, Dwayne Johnson went viral on the internet with a recipe, which, over the years, has been reproduced ad nauseam. They were so successful that chef Puttie even launched her own line of banana and coconut pancake mixes in 2022, just a year after their debut.
The formula for the most famous pancakes in stardom would be developed by Johnson with Janette Puttie. The key difference in their recipe is the generous coating of peanut butter and 100% maple syrup, as well as the incorporation of diced and sliced bananas into the batter. There is also an abundance of coconut, which is incorporated into the pancakes in three different ways: unsweetened shredded coconut, coconut milk and coconut water.
Here’s the recipe for coconut banana pancakes to ‘eat wisely’, according to The Rock.
The recipe, in 3 steps

-Sift the flour and baking powder into a large bowl.
-Add the sugar, salt and grated coconut. Mix lightly with a wooden spoon.
⁃ In another bowl, lightly beat the eggs, coconut water, coconut milk, whole milk, vanilla extract, coconut oil and butter.
⁃ Make a well in the centre of the flour mixture and pour in the milk mixture.
-Mix lightly to combine, leaving the batter lumpy.
-Add the bananas to the batter, and stir until smooth.

-Heat lightly greased griddle to 275 degrees or skillet over medium heat, using a combination of spray and butter.
-Pour batter onto griddle with a ladle or measuring cup about the size of a cup for large cakes and 1/4 cup for small cakes.
⁃ Cook until the tops of the pancakes are bubbly and have a few pops, 2 to 3 minutes. Turn over carefully with a thin spatula.
⁃ Cook until golden brown and crisp, about 2 – 3 minutes, adding more spray and butter if necessary.

-Transfer to a plate or platter and serve.
