After showing us how to prepare a ‘quick and easy’ version of butter chicken, the chef now interprets a healthy version of a pasta dish that includes an unexpected star ingredient: lettuce. For me, lettuce is what gives it vitality’.
It’s an addition inspired by his culinary career in France, where he ate fresh peas finished with bacon and lettuce. His recommendation when seasoning pasta with lettuce is to dry it well and add it at the end of the cooking process so that the dish is not watery.
In the video from his ‘Next Level Kitchen’ programme, Ramsay prepares a buttery pasta with peas and bacon, packed with garlic and herbs, of which he says: ‘this is a dish I’ll eat the night before a big race, because it’s hearty, delicious and, most importantly, very easy to make’. Well, here’s the culinary process of the dish so you can recreate it at home, whatever your category.
PROCEDIMIENTO
- Place a large pot of water over medium-high heat and bring to the boil. Once boiling, salt the water generously and add the pasta. Stir the pasta so that it does not stick together and continue boiling until al dente, about 8-9 minutes.
- In a large skillet over medium heat, add the pancetta and grapeseed oil and cook until the lardons begin to caramelise, about 3 minutes. Season the pancetta lightly with salt and freshly ground black pepper.
- Add the garlic and ash and continue to cook until fragrant, about 2 minutes. Add 2 tablespoons of butter and continue to cook until the butter has melted completely.
- Add the frozen peas and continue cooking until they begin to soften, then add the chives, parsley, basil and vegetable stock. Season the sauce lightly with more salt and add another 2 tablespoons of butter. Continue cooking until the butter has melted completely.
- Add ¼ cup of the pasta cooking water, the lemon zest and lemon juice to the pan and stir to combine.
- Gradually add the cooked pasta, stirring between each addition to completely coat the pasta with the sauce.
- Serve the pasta with a sprinkling of chilli flakes and freshly grated pecorino.
