Autumn falls in the city, while Nunuka synchronizes with the season to delight its diners with new ancestral recipes of Georgian cuisine updated through the innovative approach that characterizes it.
The Georgian bistro founded by Nino Kiltava, located in the Chueca neighborhood, presents three innovative creations that you can’t miss: the Bean salad in green sauce, the Turkey cannelloni with smoked Georgian cheese sauce and truffled onion glace, and the Shoulder of lamb in tarragon mellow rice.
The first elaboration features green beans, a food used mainly in the Georgian region of Imereti, where they are often served in salads. Thus, Nunuka has reinterpreted this tradition to create a lighter and fresher dish that maintains the essence of the original recipe.
The turkey cannelloni is inspired by Satsivi, one of the most emblematic dishes of Georgian gastronomy, traditionally prepared with turkey and served at special celebrations, such as New Year’s Eve, with its unmistakable sauce of ground walnuts, garlic and spices.
On this occasion, Nunuka has reinterpreted it with a turkey cannelloni accompanied by a Georgian smoked cheese sauce and truffled onion glace. Finally, the Lamb Shoulder evokes Chakapuli, a suckling lamb stew cooked with fresh herbs and green plums – a classic in Georgian homes – and Shila, a spicy rice and lamb stew.
To give life to this project, which has already become the temple of Georgian gastronomy and culture par excellence in Madrid, Nino Kiltava works hand in hand with the gastronomic consultancy Ansón&Bonet. The interior design, meanwhile, is the work of the studio Las 2 Mercedes who, guided by Kiltava, have replicated and paid homage to his grandmother’s old house -Nunuka- in Georgia. A place full of personal memories, objects that hold stories of great sentimental value and with many Georgian touches that give this small and cozy bistro a totally homely atmosphere.
