From Barcelona’s ‘Sips’ to Madrid’s ‘Salmon Guru’: these are the Spanish bars that are among the 50 best in the world

The '50 Best Bars in the World' have just been revealed. And this is their tribute to our effervescent national scene.

Based on the dissolution and combination of a series of factors such as contemporary innovation, creativity or the technical precision of the proposal of its bars, the list of the most prestigious bars on the planet is generated.

The list is updated annually at an awards ceremony, which this year took place – and made its debut- in the city of Singapore after fifteen years of history. On that stage, the best bars in the world were announced, with Barcelona’s Sips bar coming out on top.

Behind Sips, New York’s Double Chicken Please came in second, while Handshake Speakeasy, the tucked-away cocktail bar in Mexico City’s trendy Colonia Juárez neighbourhood, took bronze, and Barcelona’s trendy Paradiso cocktail bar, fourth.

Beyond the international winners of the ‘World’s 50 Best Bars‘, we narrowed the spectrum to take an honorary tour of the top 3 Spanish bars praised in the list.

SIPS

Barcelona’s Eixample is home to the best bar in the world, founded in 2022 by Simone Caporale and Marc Álvarez. Two of the most creative minds in the sector would then open the doors of this bar in an aesthetic key with pastel pink and green decorations.

This modern bar concept with a capacity for only 35 people, features an island bar where you get a glimpse of the pioneering techniques behind many of their creations served in sculptural glasses; such as their ‘Daiquiri Heliodora’ presented in a rum and lime and sherry glass with grapefruit shaved ice.

Sips thus combines sophisticated design with experimentation and cutting-edge techniques in the world of mixology, drawing on the significant experience of Caporale at the Artesian in London or Álvarez at Ferran and Albert Adrià’s ElBarri restaurant group.

PARADISO

Mixology lovers will know that the Eden of cocktails can be found in Barcelona, specifically in Paradiso.

This speakeasy, accessed through a pastrami shop cooler, rose to the top of the ‘World’s 50 Best Bars‘ list in 2022, and now ranks fourth.

Paradiso, run by Giacomo Giannotti and Margarita Sader, stands out for both its high-end cocktail offerings and its high-end aesthetic, which runs from the entrance to the wooden bar, from which it serves its liquid concoctions including cocktails such as ‘On Fire’: a milk punch with bourbon, oloroso sherry, tahini or sweet potato, as well as its liquid version called ‘Fleming’, inspired by the discovery of penicillin.

SALMON GURU

Madrid’s Salmon Guru is also among the 50 best bars in the world, climbing up to 16th place.

This Argentinian cocktail bar run by Diego Cabrera, which has an extension of its premises in Dubai, has become a representation of irreverence and creativity in the world of mixology.

Its space, which was restored to be reborn in another revolutionary format, is mixed with prints and images of animals, comics and Asian references that coexist in an eclectic way.

In its new menu, they serve signature cocktails divided into categories that dance between fruity, refreshing, sweet and sour, strong or untouchable, along with garnishes distributed in 19 dishes among which stand out the crispy sea bass nigiri or the samosa stuffed with a Mexican stew.
