Mario Sánchez Ariza and Charlotte Finkel have prepared the perfect prelude to prepare us for the official Christmas. In just two years since its opening, Comparte Bistró has established itself as a gastronomic reference in the capital, and its new seasonal menu, designed for the holidays, corroborates this. Composed of nine courses and designed for “sharing”, in its gastronomic proposal ‘paritana’ – based in Cádiz and France – there is no shortage of smoked meat and fish, homemade by Mario.
Other highlights include chestnut and mushroom velouté and crusted fish -or en croûte-, while the central meat is a roast veal shank, a typical French Burgundy recipe. This menu costs 85 € and will be available from Tuesday to Saturday, midday and evening, until December 23. Those who want to spend a more exotic Christmas, but without leaving the capital, can do so at China Crown. For these special dates, the restaurant proposes an ode to the star dish on its menu: Beijing Lacquered Duck. Chef Felipe Bao follows the original recipe from the 15th century and proposes two traditional styles of cutting this iconic dish. On the one hand, the ‘feather style’ cut, which shreds the meat into slices, and on the other, the ‘duck skin style’ cut, which is executed without damaging the meat. This ritual is a fundamental part of successful plating.
The elaboration of the Beijing Lacquered Duck involves a laborious process: from the cleaning of the duck to the 5 hours that are invested in the lacquering with water, sugar crystal, honey and spices, which gives the meat its sweet and intense flavor and its characteristic shine.
This year, in addition, it becomes an even more special dish, since only 200 units of the prized delicacy will be prepared. It will be available at the restaurant, but also in delivery format. If you want to celebrate Christmas from the sky of Madrid, Ginkgo Restaurant & Sky Bar brings us a very sophisticated proposal. For both December 24 and 31, they have prepared two exclusive menus full of Christmas atmosphere and a quality gastronomic evening. Among the dishes that can be tasted these nights, the crunchy toast of caramelized foie micuit with sautéed strawberries with Modena, the Cantabrian anchovy on brioche bread and smoked butter, fried artichokes with egg yolk and ham powder, or the main courses of sea bass loin with marinara sauce and clams in Jerez, and beef sirloin medallion with foie gras and Perigord sauce; on Christmas Eve.
The menu will open with a gourmet appetizer of Oyster sorlut #2 with Bloody Mary, and will also include starters such as the Carpaccio of carabinero with Baeri caviar. To top it all off, the main courses will be a turbot loin, white asparagus velouté and toasted egg yolks, and the suckling lamb ingot with its reduced sauce and sautéed baby potatoes in butter. In recent years Christmas does not begin in Madrid until the lighting of the tree at the Four Seasons Hotel. It has become a symbol of the capital and, therefore, celebrating the holidays in this hotel is a must. But that’s not all, because the Four Seasons has a wide range of possibilities to celebrate Christmas. Dani Garcia’s Dani Brasserie, located on the seventh floor of the hotel, offers special menus for Christmas Eve, Christmas and New Year’s Eve. Chalet Ruinart
The menu proposed by Chalet Ruinart becomes a gastronomic journey to the Alps from a cozy log cabin in Madrid. An ephemeral experience that the oldest champagne house in the world, Maison Ruinart, inaugurates at the Rosewood Villa Magna Hotel, which will last until March 3.

The most special and magical season also arrives at Zielou, the emblematic restaurant for which executive chef Juan Sánchez has prepared the best menus to celebrate Christmas. His creative signature cuisine, which gives rise to a fusion of traditional cuisine with international ingredients, is now expressed in the form of a group menu in banquet format, or vegan paired with the best selection of wines.
Although the main course comes with its special Christmas Eve menu (80€), delighting diners with a selection of starters to share as homemade croquettes of fresh milk and jerky with crispy Parmesan or flame grilled scallops with citrus sauce and fresh Chinese chives with Sicilian gremolata and French lemon curd cream, or its main courses: Cod confit in lemon thyme accompanied by creamy peppers and hijiki seaweed and the Carrilleras al Mole de Olla with pineapple, pickled onion and cilantro sprouts. La Santa María
Christmas is not only about meals or evening parties. Also through delicious snacks like the one offered this season by the Hotel Barceló Torre de Madrid in its new design restaurant La Santa María Gastrobar.
The five-star hotel celebrates Christmas with El Horno de Babette, the Madrid bakery that bakes one of the best versions of the roscón, which will be offered in its individual version of 90 grams, called the rosconcito de Babette.
This new recipe developed by the artisan bakery since 2008 is made using natural citrus fruits, slow and progressive kneading, baking at low temperature and baking in a mold, thus achieving an exquisite and tender crumb. A delight that can be enjoyed by locals and visitors with views of the best surroundings of the capital.

Luxury hotels celebrate Christmas in a gastro key with exclusive menus designed by Michelin star chef Mario Sandoval.
The executive chef of his restaurants El Jardín de Orfila and Haroma presents a Christmas Eve menu, featuring creations such as a creamy vichyssoise with truffle gelée and caviar, or a juicy suckling pig and its crispy skin, with a sweet closing marked by gianduia with orange and almond liqueur.
They will also display on their tables the official menu with which to bid farewell to the year on New Year’s Eve with a velvet cauliflower starter with Iberian ham gelée and Osetra caviar, or a grilled carabinero with American of its juice, pickled sea bream with endive and watercress salad and sirloin Wellington with foie duxele, demiglace of its juice and red fruits. The perfect finishing touch, the dessert of nougat meringue with hazelnuts and chocolate.
As for the wine pairing, both menus include a careful selection of wines and champagnes such as Laurent Perrier, Louro do Bolo (D.O. Valdeorras), Sierra Cantabria (D.O. Ca. Rioja) or Jorge Ordóñez nº 2 Victoria (D.O. Málaga).

Club Financiero Génova
The most exclusive club in Madrid presents a haute cuisine menu designed by Nino Redruello with permanent views of Madrid’s constellation of lights. The chef will serve a proposal structured around the best dishes of the year of Familia La Ancha, which will continue with a party with open bar, live music and cotillion until three in the morning.
A gastronomic experience that will begin with a special menu of culinary milestones through four snacks: a seafood suquet, rock mussel and red shrimp to whet the appetite, a rose of lemon fish with ajoblanco, spider crab and sea urchin croquette, or spelt carbonara with black truffle to finish. For starters, open grilled carabinero with bordelaise sauce and slices of Boletus Edulis and celeriac tatin and Bresse pigeon with winter truffle.
The main courses will consist of a delicate wild turbot with its pil pil and caviar and an exquisite sirloin Wellington with red fruit sauce. And for dessert, two classics of the house: homemade flan with white truffle and aged rum babà, mignardices, and, finally, nougat and Christmas pastries.
ABYA
The restaurant, located in the Saldaña Palace, also wants you to celebrate the holidays in style. That is why it has prepared an exclusive plan to welcome the New Year, with the help of its chef Aurelio Morales, who has created a special menu to give yourself a tribute on the last night of the year. For starters, you can not miss the 100% Iberian acorn-fed ham, which is accompanied by five starters: Roastbeef stuffed with pickles and lamb’s lettuce, King crab with saffron “beurre blanc”, National lobster with thermidor sauce with Louis XIII cognac and Croquette of fresh milk and 24K gold.
Afterwards, the diner will enjoy a cream of carabinero and caviar, to move on to the exquisite main courses composed of wild turbot with carrot meuniere and shrimp and Wagyu sirloin with perigordini sauce and black truffle “Tuber Melanosporum”. To end on a high note, the menu includes a dessert of pecan nut, coconut and gold custard. To continue the party, the cotillion with DJ, entertainment and open bar will start afterwards. The menu costs 530 € (also with wine pairing) and the cotillion is priced at 250 €.
