Most restaurants have already started the new season with their batteries more charged than ever. ISA, located at the Four Seasons, is a clear example. Shortly before celebrating its second anniversary, it has just released a new menu that is an improved gastronomic experience inspired by Southeast Asia. With Nacho Vara as the mastermind behind the stoves, this fall ISA will surprise diners with reinvented traditional Japanese dishes. In the words of its chef, it is a “more complete menu, expanding the volume and offering a greater variety of dishes”.
In its renewed menu we can taste dishes such as Tsukune (chicken yakitori), Boletus Chawanmushi (a delicate savory flan), Katsusando (shredded lamb sandwich) and a new Maguro Tsukedon Temaki among others. There will also be room for Southeast Asian flavors with delicacies such as Peking duck bao, mizuna and tempura shrimp salad with vinaigrette inspired by the sauce of Vietnamese nems or a tempura eggplant Khao soi.
Regarding the liquid part, its Head Bartender Miguel Perez has created a disruptive and original menu inspired by manga and divided into 4 chapters, where you can try cocktails such as Yogurt, a proposal based on Roku gin, lacto-fermented strawberry, lemon thyme redistilled and coconut water.
Keep up the pace in September
This month comes well loaded in the restaurant ISA. From September 14 to 24, the restaurant will participate in the Hotel Tapa Tour, an initiative that seeks to bring the haute cuisine of hotels to everyone through different routes of tapas with food and wine pairing. For this edition ISA has prepared four tapas, including a beef Bao, Japanese curry and crispy tapioca accompanied by a glass of D.O. Ribera del Duero Valsotillo.
That’s not the end of her plans, because ISA’s agenda is on fire. From September 18 to 24, she will also participate in Negroni Week, a solidarity initiative with Slow Food and Campari. And on the same 18th, the fun-filled ISA Nights will also be back.
Nor will it leave mixology aside. Coinciding with Madrid Cocktail Week, which takes place from September 25 to October 1, he has organized several Guest Bartendings with some of the best bartenders in Europe, such as Giorgio Bargani of The Connaught Bar in London, Ricardo Rossi of Freni e Frizioni in Rome and Benjamin Cavagna of the mysterious and exclusive 1930 in Milan.
