Castilian gastronomy (and gentrification) are in full evolution in the capital, generating a whole proliferation of bars specialized in this traditional gastronomic art, between austere decorations and dishes with identity signs of the Spanish brand, which are making their demodé concepts now the new fashion. We present some of our favorites within the Madrid scene.
KILLO
The España cañí is channeled in a contemporary format in Killo, an informal restaurant in Chamberí that fuses the warmth of Cádiz and the modernity of Madrid. In this space they offer signature cuisine with international influences, sustained by a base of mostly local and Cadiz products.
In Killo they intend to maintain that freshness of the south with the focus on their menu in which they bring to the capital the best of Zahara de los Atunes, serving reinterpreted creations such as shrimp waffle, tuna tartar, tomato stuffed with homemade tuna pate or tuna marmitako Andalusian style, which meridar both with their vermouth and craft beer.

LA GILDERÍA
La Gildería updates the classic tavern of a lifetime in the neighborhood of La Latina, based on the traditional and folklore. In its display stand they offer from cold snacks such as octopus molletes, La Curiosa preserves with mussels, scallops or smoked sardines on toasted glass bread to other remastered elaborations such as smoked cod with piparra mayonnaise. Although here the gildas are the main protagonists, versioned with ingredients such as octopus, smoked salmon, shrimp or smoked tuna.

CASA ORELLANA
In this contemporary tavern, Guillermo Salazar interprets tradition and traditional flavor through the best recipes from the north and south of Spain. A new tapas classic on display at Casa Orellana where you can enjoy raciones, cañas, vermouth and a selection of delicacies such as torreznos, canned Iberian press rice, oxtail croquettes or spider crab salad.

TABERNA DEL LOBO
La Taberna del Lobo recovers the tavern atmosphere of the taverns of Madrid through a concept devised by Ana Romero and Daniel Montes, which they transfer to their two locations in Malasaña and in the Salamanca neighborhood.
This traditional bar is inspired by the eating houses set in Ana’s grandmother’s kitchen and Dani’s favorite childhood dishes to present the classics of Madrid tapas such as boquerones en vinagre con patatas fritas, papas bravas, albondigas guisadas or tocinos de cielo, while giving a nod to the tapas of El Puerto de Santa María with its chicharrones, loncheados or cucurruos.
El Lobo, which is also reactivating the castizo scene in Madrid, has become, along with the other neo-taverns mentioned above, the new meeting places for the capital’s youth.
