Dabiz Muñoz has just opened his new Christmas Box to reveal all the magic and secrets it will encapsulate. After a few months working on it, today, Thursday November 14, it goes on pre-sale so that we all have the opportunity to experience his ‘gastronomic feast’, whether we choose to taste it on Christmas Eve or New Year’s Eve.
Honestly, it’s the best box we’ve made in the 5 years we’ve been making the Christmas Boxes’, says Dabiz in the sequence of videos he has published in stories, dedicated to the Christmas Box that he titles this year as ‘WILLY FOG XO‘. The inspiration? A trip around the world, starting from Spain, with which to realize a hedonistic fantasy of contrasts of flavors, textures and products.

Below, the chef unveils some of the innovative dishes that the box will include, and everything ‘we should keep in mind’. It starts with a Madrid-style Christmas ramen, with eggs, free-range chicken, a silky soup somewhere between a Tokyo ramen and a Madrid stew’. The second dish is a txangurro gratin that travels between Donosti and Singapore by the combination of spider crab stew and chilly krab from the street stalls of the Asian country.
The moment of the Castilian-Korean festival comes with a roasted and lacquered beef rib with a sauce made with maple syrup, cooked for 48 hours. An elaboration that accompanies with a super-fresh live lettuce on which to put the meat, and tuck it inside as a taco, along with a bunch of garnishes that come on the plate.
The holiday box will also include an XO tartar sauce, a creamy buttery smoked grilled mashed potato with butter, a steamed rice, a homemade kimchi with Chinese cabbage from their diverxo supplier’s garden, some crunchies and a kind of mojo they make with chiles.
For dessert, Dabiz is again inspired by his wife. We finish with Pedroche’s brioche with Berber perfumes with aromas and spices from Marrakech, from North Africa, super sparkling’. It is a kind of liquid custard with toasted white chocolate caramel, and a cookie with cocoa.
