Dabiz Muñoz‘s intense feeling for gastronomy is now channelled into an exclusive Valentine’s Day menu in the purest GoXO style.
Muñoz has designed a haute cuisine menu for two to romance the evening in the warmth of home, comprising four delicious dishes designed for this special occasion.
The chef suggests starting with an exquisite appetizer of green jalapeño gazpacho with prawns, creamy XO tartar, tobiko and low-temperature egg. This is followed by a starter of hyper-crispy fried chicken made with XO’s secret formula and accompanied by sweet chilli sauce.
The main course presents cannelloni made with vine-grilled Duroc Barbacoa pork ribs with trumpets of death, tamarind jus and lemongrass béchamel sauce, accompanied by truffle jus.
The cherry on top of this succulent experience is sculpted in the form of Beso Rojo Cake made of chocolate-raspberry mousse with hazelnut praline and Papantla vanilla toffee, accompanied by Thai meringue milk.
