Chuck’s famous restaurant has just opened its doors in Madrid‘s effervescent culinary scene to make a distinctive mark with its tasty proposal that fuses the great classics of a bistro with Asian flavours.
The New York chef, who started his successful career with smash burgers, has decided to transfer his passion for cuisine and design to the capital, extending his culinary universe to a broader menu that goes beyond burgers.


Chuck’s Madrid
After opening locations in Milan, Paris and Rome, Chuck’s is now evolving its concept with a focus on high-quality produce in a menu influenced by Chuck’s Filipino-American roots and the executive chef’s Asian experience. They have teamed up to offer dishes that, while not explicitly French, lean towards remixed bistro fare, perfectly paired with natural wines and craft beers.
Highlights include oysters with mignonette and radishes with miso butter and bread as an appetizer. For mains, they suggest grilled prawns with ponzu and mandarin kosho, artichoke with hollandaise or hamburger with kimchi, shiso and fries. Dessert closes the experience with an innovative chocolate cake with ganache and miso and soy glaze.


Liquid menu
On the drinks side, the bistro will feature a wine list curated by Natalia Cano Bresciani, who previously worked at Bendito. This includes selections from classic wine regions and renowned natural winemakers such as Anders Frederik Steen and prestigious Spanish producers such as Barranco Oscuro, Eloi Cedo, Nuria Renom and Alfredo Maestro. Meanwhile, craft beer enthusiasts will be able to enjoy some iconic labels such as Japanese beer Hitachino.


The entire proposal unfolds in the midst of an architectural work signed by Madrid-based Barr Atelier, which encapsulates the communal charm of a classic French bistro, with a distinctly local touch. Conceived and designed by Chuck himself, the project encompasses a coherent vision of the space down to the smallest detail. Its interior, with seating for 60 diners and outdoor seating, features bespoke furniture made by local artisans, which coexist in the same space visually stimulated by contemporary paintings by artists such as Lucien Smith, Eliza Rutson Pang and Almudena Canedo.
