The best tortilla de patatas is served in this Cantabrian restaurant

The Cañadío restaurant in Santander stands out with the best interpretation of this traditional dish.

The XVI Spanish Potato Omelette Championship, within the framework of the Alicante Gastronomic Fair, awarded the creation of chef Pedro José Román of the Cañadío group as the best ‘tortilla de patatas‘ of 2023.

The Cañadío restaurant, known for serving avant-garde Cantabrian recipes, already won this award two years ago. Now, it has been recognized again for its high interpretation of the traditional dish for which it had to compete with 14 other chefs from different autonomous communities.

Pedro José Román, the author behind this award-winning creation by food critic Rafael García Santos, unveiled his magic recipe, emphasizing the importance of the raw material when preparing his tortilla de patatas: fresh eggs from farms in Cantabria, potatoes of the monalisa variety and virgin olive oil of the arbequina variety. The key? Lots of Turieno onion.

This is an elaboration that has been perfected for more than 16 years within the Cantabrian group founded in 1981 by the businessman Paco Quirós, with Cañadío at the head, which also extends to other premises in Madrid.

Beyond Cañadío, the second and third prizes were awarded to the restaurant O Cabo (A Coruña) of Isabel Gesto and Ramón Rodríguez, and the winner of the previous edition, Carlos Olabuenaga, of the restaurant Tizona (Logroño).
