Andoni Luis Aduriz debuts with his first restaurant in Mexico

Following the renewal of the Mugaritz season, Andoni Luis Aduriz‘s new gastronomic concept is born on the other side of the ocean. Andoni Luis Aduriz and the Xcaret Group have joined forces to present XAL, the renowned Basque chef’s first restaurant in Mexico, which will open its doors during the first quarter of this year.

The restaurant will be located inside the exclusive boutique hotel La Casa de La Playa, on the idyllic Riviera Maya passageway that attracted the chef to open his new restaurant there. Whether for its architecture, its design or its privileged location surrounded by nature.

XAL proposes a cuisine of influences inspired by the historic Manila Galleon Route, the first trade route that connected Asia with Europe and America. ‘At XAL we wanted to focus on the identity, culture and gastronomy of Mexico and develop a cuisine of influences where we explore three types of cuisine – Filipino, Mexican and Basque – enhancing their common elements through Mexican produce. Mexico becomes in XAL the centre and the heart between Asia and Europe’, explains Aduriz.

Based on Andoni‘s experimental and creative identity, this multicultural temple will serve the sophistication of Mexican culinary tradition with contemporary techniques. An adventure in which he will explore the cultural exchange and intersection between Mexico, the Philippines and the Basque Country, with dishes that will change depending on the season.

There, diners can have breakfast and lunch à la carte, as well as delve into the depths of their eclectic experience with a 10-course tasting menu. Among them, delicacies such as a rice tamale with marmitako and tuna crudo, a blue corn taco with duck confit, field herbs and crispy pork castacán, along with a selection of drinks including sakes, teas or wines that dilute the three cultures that harmonise the flavour of the dishes.
