Dabiz Muñoz creates a Thai paella that ‘explodes taste buds’

The chef’s experimental gastronomy is influenced and enriched by all the cultures of the world: an eclectic identity with which he never ceases to surprise as one of the best chefs in history. From Madrid to Dubai, Dabiz Muñoz‘s StreetXO restaurant has now presented a new irreverent dish that reinvents a Thai classic, fusing it with Spanish and other influences.

The Madrid-born chef, who is currently based in Dubai, has created the Tom Yum Thai Paella squared. A dish that will blow heads off and explode taste buds. And yes, it’s true, this is not your grandmother’s paella…’, says Dabiz in his Instagram post in which he presents this dish that he adds to his paella collection, which he appears explaining in a video and tasting it with enthusiasm.

This is a Thai dish with wings cooked at a low temperature on the grill, pressed and topped with Tom Yum cream and tamarind paste with a hint of coconut. The rice base is infused with all the spices and aromatics in a broth with Tom Yum soup, topped with semi-dried tomatoes with a kind of chilli jam.
